Holy Blooming Onion with Sum Dipping Sauce

Ingredients:
Dipping Sauce:
- ½ cup mayonnaise
- ¼ teaspoon Typhoon Shelter Sum Sum Seasoning
- ⅛ teaspoon dried oregano
- Holy Duck Chili Oil (to taste)
Coating:
- 1 cup milk
- 1 egg
- 1 cup all-purpose flour
- 1 ½ teaspoons salt
- 3 teaspoons Typhoon Shelter Sum Sum Seasoning
Onion:
- 1 large sweet onion
- ¾ cup vegetable oil for frying
Directions:
- Make sauce: In a medium bowl, mix together mayonnaise, Typhoon Shelter Sum Sum Seasoning, dried oregano, and black pepper until well combined. Add a drizzle of Holy Duck Chili Oil to taste. Cover and refrigerate until needed.
- Make coating: Beat milk and egg together in a medium bowl until well combined. In a separate bowl, mix flour, salt, and teaspoon Typhoon Shelter Sum Sum Seasoning.. Set both bowls aside.
- Prepare onion: Slice 1 inch off the top and bottom of the onion and remove the papery skin. Remove a 1-inch diameter core from the middle of the onion, leaving the very bottom of the root end intact. Use a large, sharp knife to slice down the center of the onion about 3/4 of the way down; turn the onion 90 degrees and slice again. Keep slicing each section in half until you have 16 sections, being careful not to cut through the bottom of the onion. Spread the "petals" apart.
- Dip the onion into the milk mixture and then coat well with the seasoned flour mixture, separating the petals and sprinkling the flour mixture between them. Dip the onion back into the milk mixture, then coat with the flour mixture again to ensure all pieces are well coated.
- Fry the onion: Heat oil in a deep fryer or deep pot to 350°F (175°C). Lower the onion, cut-side up, into the hot oil and fry until golden brown, about 10 minutes. Drain on a rack or on paper towels.
- Serve: Open the center of the onion wide enough to fit the bowl of dipping sauce and serve alongside for a blooming good time!
